Grandma’s Favorite Whoopie Pies

This whoopie recipe is from my grandmothers recipe. Some of my earliest memories were of her making these for me. As soon as I was old enough to make these myself she let me help. I used to go over to her house every sunday and she and I would bake some sort of treat, mostly these woopie pies.
I’m pretty sure this recipe is a double of an older one, so if you're not looking to make a massive batch of whoopie pies, feel free to split this in half. The frosting can also be anything you feel like, I find the marshmallow to be the best. If you don't have shortening, its a 1:1 ratio for butter, so the two can be swapped easily. I find the frosting to be must better with butter, but traditonally it was made with shortening.
Recipie
Cakes
- 1 cup shortening
- 2 cups sugar
- 2 eggs
- 2 tsp vanilla
- 4 cups flour
- 2 1/2 tsp baking soda
- 2 cups milk
Frosting
- 1 cup marshmallow fluff
- 1 cup butter (softened)
- about 1/4 cup milk
- 4 cups (about one bag) powdered suagr
- 2 tsp vanilla
Cakes Instructions
- Preheat oven to 350°.
- Cream shortening and sugar together.
- Add eggs, vanilla, and cocoa.
- Add milk and flour and mix thoroughly.
- Drop with a spoon onto a cookie sheet.
- Bake for 10-15 minutes
Frosting Instructions
- Cream butter, vanilla, and fluff together.
- Add powdered sugar slowly, mixing the whole time. It will seem like it won't come together but it will, keep mixing.
- Add a little milk and mix. Check how spreadable it is, then add more milk if its too thick. Continue until it is easible spreadable. If it becomes too thick, you can add more sugar.
- Take two cookies of about the same size and spread frosting on one. Place the other on top the frosting to create the sandwich cookie.
Start by mixing the shortening and sugar together.
Add the cocoa, egg, baking soda, and vanilla and mix.
Level off the tablespoon with a knife.
Add the milk and flour.
Mix everything together, making sure to scrape the sides occasionally.
Scoop up a bit of the batter with a spoon.
Drop the batter onto a cookie sheet using another spoon or your finger.
For big cakes, make them about this size.
I like to set up my cookie rack like this with paper towels below. This makes it much easier to clean later.
Usually I use 3 cooling racks, but somehow all of mine disappeared.
Add the fluff, butter, and vanilla and mix until soft.

Add the powdered sugar, but be warned it will try to poof out the top of the bowl.
The frosting will look like it won't come together, but just keep mixing until it does.
Once its one solid mass add a bit of milk. Do not add all the milk at once, or you risk getting very runny frosting. Add a bit of milk and mix, then check the consistency. Repeat until it becomes easily spreadable.
Take two cakes of about the same size and spread frosting between them
I like to place them in the tubberwear like this as I frost each one.
